Ingredients
4 tilapia fillets
2 tablespoons of margarine; low in fat
1/4 cup green bell pepper; chopped up
4 tablespoons chopped onion
1/4 cup toasted almonds; chopped up
1/2 cup fresh breadcrumbs
1/4 teaspoon oregano
4 tablespoons fresh lemon juice
1 tablespoon chopped coriander; (or parsley)
1/2 teaspoon salt
2 cup of water
2 cloves of garlic; crushed
1 bay leaf
1 teaspoon red pepper flakes
1 lime peel
Melt the margarine in a hot skillet over medium heat. Don’t let the butter brown. Add green bell pepper and 2 tablespoons onion. Then fry the pepper and onion until the onion is transparent. Then add the almonds, breadcrumbs, oregano, a tablespoon of lime juice, coriander and salt. Mix well. Place the stuffing in the center of each tilapia fillet. Then roll up each fillet and secure with toothpicks. In a shallow baking pan, combine remaining 2 tablespoons onion, water, garlic, bay leaf, red bell pepper, and remaining 3 tablespoons lime juice. Place tilapia fillets in pan and bake at 400 degrees F. for 30 to 35 minutes, basting occasionally, until tilapia flakes easily. Remove tilapia to a serving plate and garnish with thin strips of lime zest.
