Fudgy Chocolate Cake in a Mug
What do you need:
3 tablespoons gluten-free flour (sifted)
3 tablespoons of milk
3 tablespoons powdered sugar
1 tablespoon + 1 teaspoon cocoa
1 tablespoon butter (softened)
1/2 teaspoon vanilla extract
1 scoop of ice cream
1 pinch of salt
In a large bowl, combine the flour, powdered sugar, 1 tablespoon cocoa, and salt. Carefully mix the milk, butter, and vanilla extract. Stir until ingredients are well combined. Pour the mixture into a microwave-safe mug and microwave for 1 minute.
Cool for a few minutes before sprinkling with the remaining cocoa. Serve with ice cream on top.
easy apple crumble
What do you need:
6 red apples, cored, peeled and each cut into 8 wedges
3/4 cup + 2 tablespoons brown sugar
4 tablespoons of rice flour
3 tablespoons of almond flour
2 tablespoons dehydrated coconut
1 1/2 tablespoons margarine, softened
With a small amount of water, heat a skillet over medium heat and then place the apple wedges to cook until tender. Remove from heat and set aside. To make the crumble, mix 3/4 cup each of the sugar, rice flour, almond flour, grated coconut, and margarine in a bowl. Mix with clean hands until ingredients are well combined.
Layer cooked apples (along with juices) in a greased baking dish. Spoon the crumble mixture over the apples and bake in a preheated oven (180C) for half an hour or until golden brown. Serve hot or cold with cream or yogurt.
Crispy chocolate and almond bites
What do you need:
4 pieces. SunRice Simple Thick Crumbled Rice Cakes
1/4 kg (or a little more) of milk chocolate
1/2 cup toasted sliced almonds
1/2 cup diced dried apricots
In a saucepan, melt the milk chocolate with a little water over low heat. Once melted, add the crumbled rice cakes, almonds and apricots. Stir to combine the ingredients well.
Remove from heat and scoop 1 tablespoon of the mixture at a time onto a greased baking sheet. Allow a few minutes to cool and harden before serving.
